The role includes a wide range of responsibilities, ranging from leadership, dish costing and procedure implementation, assisting the leadership team with day-to-day management as well as contributing to dish development. Key Responsibilities:
Developing menus and costing dishes, and working with the Head Chef and venue management on cost control and achieving budget targets
Leading food preparation and cooking across prep and à la carte lunch and dinner services
Checking every dish for quality, consistency and presentation before it leaves the kitchen
Showing cooks and kitchen staff how dishes should be prepared, and guiding them on recipes and techniques
Allocating tasks to, and overseeing the work of, cooks and other kitchen staff during service
Liaising with management and front-of-house staff on menu changes, dietary requirements and service issues
Managing stock levels and ordering food and supplies in line with company procedures and recipes
Upholding food safety and hygiene standards, and keeping the kitchen, equipment and storage areas clean and organised during and after service
Helping to recruit, induct and train new kitchen team members
Storing, freezing and preserving food correctly to maintain quality and reduce waste
Skills and Experience Required:
Applicant must have at least 1 year of relevant employment experience
Applicant will ideally hold relevant vocational or tertiary qualifications
Experience in prep and à la carte cooking for lunch and dinner services
Experience working in fast-paced, service-driven venues
Experience with menu planning, food costing and stock control
A solid understanding of food safety and hygiene practices
The ability to perform under pressure with strong attention to detail
Good communication skills and a positive attitude
A team-first mindset, with the ability to work independently and unsupervised
A passion for food and a strong focus on the guest experience
Availability to work a rotating roster, including weekends and public holidays as required
Position Offers:
Full-time, permanent position
Salary between $75,000 to $80,000 plus superannuation
