About the role

S’WICH is a contemporary sandwich and salad brand with stores in Bondi Beach and Surry Hills, providing the best quality ingredients in a fast-casual setting. We’re looking for a Cook to join our team in a full-time, ongoing position (not casual, part-time or fixed-term).

As our Cook, you’ll prepare, season and cook food, and take responsibility for the preparation, cooking, quality and presentation of all menu options. You’ll also handle and store all foodstuffs safely and make sure S’WICH recipes and standards are followed at every service.

Hours: 38 hours per week on average, plus additional overtime where required. Our stores trade seven days a week, 11am to 8pm, and weekend availability is essential. There are no early morning or late night shifts.

What you'll do

  • Prepare and cook food across the full menu, to order and in line with S’WICH recipes.
  • Examine foodstuffs to ensure quality, and reject any produce or stock that does not meet the required standard.
  • Season food during cooking, applying the correct seasoning and spicing to each menu option so quality and taste stay consistent.
  • Regulate the temperatures of ovens, grills, fryers and other cooking equipment, and make sure all food is cooked at the correct temperature for the correct time.
  • Portion food, place it on plates, and add sauces, side dishes and garnishes to presentation standard.
  • Brine and prepare vegetables for pickling, and mix and measure sauces and dressings.
  • Prepare food to meet special dietary requirements, keeping a working knowledge of the ingredients in all menu options so customers with allergies and dietary requirements are properly catered for.
  • Store food in temperature-controlled facilities, and monitor the temperature of the cool room and fridges so raw and fresh foods are correctly stored.
  • Complete the daily morning preparation of all ingredients required for the menu, and set up the store for service.
  • Assist with stock control, inventory and daily ordering, and liaise with produce and consumable suppliers.
  • Keep the kitchen and serving area clean, and comply with all food safety, hygiene and workplace health and safety requirements.
  • Plan menus and estimate food requirements where needed, including selecting produce and ingredients, determining cooking methods, taste testing, and assisting with quantities for costing purposes.
  • Train other kitchen staff and apprentices, from initial induction through to ongoing development, and provide day-to-day direction to staff on shift.

Essential

  • Demonstrated experience in commercial food preparation and cooking, with the ability to work accurately at speed during peak service.
  • Sound knowledge of food safety, hygienic handling and temperature control.
  • The ability to prepare, season and cook all menu options to recipe, and to portion, plate and present meals consistently.
  • Attention to detail and a commitment to quality ingredients.
  • Effective communication skills and the ability to work as part of a small team on shift.
  • Availability to work weekends, as our stores trade seven days a week.

Desirable

  • A relevant commercial cookery qualification.
  • Experience training or supervising kitchen staff and apprentices.
  • Experience contributing to menu development, costing and supplier liaison.

Pay and benefits

  • Remuneration above the relevant award.
  • Staff meals provided.
  • Ongoing training and workplace development.
  • Opportunities for progression as our business expands.
